This will deactivate the cellular radio inside the iPhone that it uses to connect to an at&t cellular reception tower. You will still be competent use the iPod features, but not YouTube or Safari. I really don't see the point of turning off the phone features on the iPhone if you aren't hard by anywhere sensitive to radio waves similar to a plane. Just don't go roaming bad the at&t network, if not they will charge you for data usage.
