An 8gb iPod Nano can hold 2,000 songs so you'll hold no problems with the 8gb iPhone.
Now If you're planning on watching videos in the adjectives, you'll be better off with the 16gb model.
Yes, your songs and pictures will only take up give or take a few 1.5gb AT MOST (depending on the file size) and the applications will definitely fit in 8.5gb of space.

Rough average of each picture size: 100-200kb (if they're photos)
Rough average of each video size: 100mb-1gb (depending on the size, about 20 minutes to a full size movie)
