This is an interesting question. The assured answer (like above) is yes, it should do it for you automatically. But I don't think this is what you meant. So, here are a few guesses at your question:
If my main iPhone computer does not have Outlook (i.e. I own installed iTunes on one computer and my Outlook is on another computer) then you need an intermediary application to sync your Outlook facts (like Calendar and Email). I use Plaxio to accomplish this. Plaxio syncs my Outlook Calendar at work to their website and then it syncs my Mac iCal calendar. Now whenever I sync my iPhone I get my most recent Outlook calendar.
If you want your bureau Outlook, like a blackberry...then you stipulation to get your company to perform the required server configuration to tolerate that happen. My company won't come near it.
If you are running Outlook at home and you want to sync...afterwards you need to forget about Outlook and numeral out where your email is coming from. It could be your internet service provider (Comcast, Verizon, etc) which is easily configured as a POP post account.
